You may want to believe the Bible is the 'word' of god, but you cannot provide the slightest bit of evidence it is so.  Like you the Biblical authors are imagining what their version of god is thinking, and making it out to be a complete psychopath in the process, imo.

He did die, as God said he would.
Were you there in the Garden? Were you God? Do you know what God was thinking or Adam?
In Genesis 3 we see why Adam died that day both spiritually and physically.

22 And the Lord God said, Behold, the man is become as one of us, to know good and evil: and now, lest he put forth his hand, and take also of the tree of life, and eat, and live for ever:

23 Therefore the Lord God sent him forth from the garden of Eden, to till the ground from whence he was taken.

In the earlier chapter Adam and Eve given the right to eat from the tree of life.
In Genesis 3 it was taken away. So he died that day because the one thing that would keep him alive was removed from him.
So he slowly died and he finally did.

Die, die is the Hebrew wording.

However you dress it up, God said Adam would die the same day but he didn't.
